Gazpacho Andaluz

1 large can tomato juice

½ English cucumber peeled and cut into pieces

1 red pepper deseeded and chopped

1 green pepper deseeded and chopped

½ medium onion chopped

1 clove garlic peeled and chopped

½ cup olive oil

Salt and pepper

 

Place all the ingredients into a blender and blend till smooth

Check for salt and pepper

Pour into small bowls and garnish with some diced peppers
